Vegan tomato soup

IMG_1170-min IMG_1173-minDelicious, healthy, vegan, easy to make, low calorie meal. This tomato soup is win-win for everyone 😉

Tomato soup (5 portions)

  • 2 trays of tomatoes
  • 2 fresh turmeric roots
  • 2 red onions
  • 2 cloves of garlic
  • 1 chili pepper
  • 2 cm ginger (grated)
  • 3 cubes of vegetable broth
  • pepper, curry, paprika, oregano (add a little bit of each to your spice liking)
  • a bit of olive oil
  • 200-400 ml coconut milk depending on how creamy you want it

Chop everything except the tomatoes, coconut milk and broth finely or just use a foodprocessor. Fry in a pot with a bit of olive oil. Chop the tomatoes finely or in a foodprocessor and add them to the pot as well as the broth. Let it simmer for 20 minutes. Add 200 ml of coconut milk and blend with a handblender. Taste it and add more coconut milk, if you want it more creamy. Use whatever vegetable leftovers you have for topping, broccoli ads a bit more protein and vitamins and make the meal more filling.

  • 2 gurkemejerødder
  • 2 rødløg
  • 2 fed hvidløg
  • 1 chilipeber
  • 2 cm ingefĂŚr (revet)
  • 3 terninger grøntsagsbuillon
  • peber, karry, paprika, oregano (tilføj en lille smule eller alt efter din tolerance af krydret mad)
  • en smule olivenolie
  • 200-400 ml kokosmĂŚlk alt efter hvor cremet suppen skal vĂŚre

Hak alting undtagen tomater, kokosmĂŚlk og bullion fint eller put det i en foodprocessor. Svits det i en gryde med lidt olivenolie. Hak sĂĽ tomaterne fint eller i en foodprocessor og put dem i gryden sammen med bullionen. Lad det simre i 20 minutter. Tilføj 200 ml kokosmĂŚlk og blend med en stavblender. Smag til og tilføj evt. mere kokosmĂŚlk for at gøre suppen mere cremet. Brug dine grøntsagsrester som pynt – broccoli giver lidt ekstra protein og vitaminer og gør mĂĽltidet mere mĂŚttende.
