Tiny paleo pancakes

IMG_3308These taste like classic pancakes but without you having to eat sugar and grains.

Tiny paleo pancakes

  • 1 banana (blended or mashed)
  • 30 g coconut flour
  • 2 teaspoons husk
  • 2 dl plant milk (I used coconut milk)
  • 1 teaspoon baking soda
  • 1 vanilla stick
  • 1 teaspoon cardamom
  • 2 teaspoon chia
  • 1 tablespoon coconut oil (melted)
  • 2 eggs
  • a handful of chopped nuts, berries and chopped dark chocolate for topping

Whip everything together in a bowl. Heat up a pan, put a bit of coconut oil on it and make little pancakes. Be careful when you turn them over – they need quite some time on the first side before they’re ready to be touched without breaking apart.

De her smager ligesom klassiske pandekager men uden, at du behøver spise sukker og hvedemel.

Små palæopandekager

  • 1 banan (blendet eller most)
  • 30 g kokosfibermel
  • 2 teskeer husk
  • 2 dl plantemælk (jeg brugte kokosmælk)
  • 1 teske bagepulver
  • 1 stang vanilje
  • 1 teske kardemomme
  • 2 teske chiafrø
  • 1 spiseske kokosolie (smeltet)
  • 2 æg
  • en håndfuld hakkede nødder, hakket mørk chokolade og bær til pynt

Pisk alting sammen i en skål. Varm en pande op, og put lidt kokosolie på den. Lav små pandekager. Vær forsigtig, når du vender dem – de har brug for en del tid på første side, før de hænger nok sammen til ikke at gå fra hinanden, når du rører ved dem.
