Coconut blueberry banana ovencakes

IMG_1402-min IMG_1403-min IMG_1410-min IMG_1411-minI call these “ovencakes” instead of pancakes because I cooked them in the oven to avoid using any oil and to make everything easier. Let’s face it – making pancakes can be such a time consuming activity and a real struggle, at least it often is for me. The outcome of these was soooo goooood! And topped with blueberry nice cream, agave syrup and freeze dried strawberries you can’t go wrong ūüėČ You can reduce calories a little by changing the coconut milk with other kind of plantmilk.

Coconut blueberry banana ovencakes

  • 2 bananas
  • 1 tablespoon tahini, peanutbutter or other kind of nut butter
  • 4 dl buckwheat flour
  • 1 teaspoon baking powder
  • 2 dl coconut milk
  • 1-2 dl rice milk or other kind of plantmilk
  • 2-3 tablespoons stevia
  • 200 g frozen blueberries
  • shredded coconut

Mash bananas and mix in a bowl with the dry ingredients except baking powder. Add the coconut milk and then rice milk little by little so you get the dough to be not very thick but pourable. Stir well (I used a hand mixer). Taste the dough – make sure it doesn’t have too much of a heavy tahini taste – you can soften this up by adding a little more stevia. It’s ok for it to have a little bit of a bitterness. When you add the berries and topping it won’t be as harsh, it will actually suit the sweet flavours well. When you’re happy with the taste, add baking powder, stir well and carefully turn the dough over the blueberries, so that they’re distributed evenly but not mashed. Use a spoon to place small ovencakes on a baking tray with cookie sheet on it. Drizzle a bit of shredded coconut on them while they’re still dough. Bake them in the oven at 170¬įC for 10-20 minutes (look after them often).

Serve with fruit, syrup and/or nice cream. I have a reeeeeally nice recipe right here.

Jeg kalder dem her for “ovnkager” istedet for pandekager, for jeg bagte dem nemlig i ovnen, s√• jeg kunne undg√• at bruge olie og samtidig g√łre det hele lidt lettere for mig selv.¬†Lad os bare se i √łjnene, at pandekageprocessen tit tager ret lang tid og v√¶re ret besv√¶rligt – det er det i hvert fald ofte for mig.¬†Udfaldet af disse blev s√• godt! Og pyntet med¬†vegansk bl√•b√¶r is, agavesirup og¬†fryset√łrrede jordb√¶r, kan det ikke g√• helt galt ūüėȬ†Du kan reducere kalorierne lidt ved at udskifte noget af kokosm√¶lken med en anden slags plantem√¶lk.

Kokos-blåbær-banan-ovnkager

  • 2 bananer
  • 1 spiseske¬†tahin, peanutbutter eller anden form for n√łddesm√łr
  • 4 dl boghvedemel
  • 1 teske¬†bagepulver
  • 2 dl kokosm√¶lk
  • 1-2 dl rism√¶lk¬†eller¬†anden slags plantem√¶lk
  • 2-3 spiseskeer¬†stevia
  • 200 g frosne bl√•b√¶r
  • revet kokosn√łd

Mos bananerne¬†og¬†bland¬†dem i en sk√•l med de t√łrre ingredienser undtagen bagepulver. Tilf√łj¬†kokosm√¶lken¬†og derp√• rism√¶lk lidt efter lidt, s√• dejen ikke er for tyk men stadig er mulig at h√¶lde ud p√• bagepladen fra sk√•len.¬†R√łr godt rundt (jeg brugte en h√•ndmixer). Smag p√• dejen – jeps det kan du godt, n√•r den er vegansk –¬†tjek at den ikke smager for meget af tahin, hvis den g√łr, kan du bl√łde det lidt op med mere stevia.¬†Det er okay, at det har lidt bittert i sig, n√•r du tilf√łjer b√¶rrene og evt. is, sirup og/eller frugt, vil de forskellige smagsnuancer komplimentere hinanden godt.¬†N√•r du synes, det smager godt, tilf√łjer du bagepulver, r√łrer godt rundt og vender s√• forsigtigt bl√•b√¶rrene ned i dejen.¬†Brug en ske til at lave sm√• klatter p√• en bageplade med bagepapir p√•. Drys lidt revet kokos ovenp√• og bag dem i ovnen p√•¬†170¬įC i¬†10-20 minutter (kig dog til dem ret ofte).
