Coconut blueberry banana ovencakes

IMG_1402-min IMG_1403-min IMG_1410-min IMG_1411-minI call these “ovencakes” instead of pancakes because I cooked them in the oven to avoid using any oil and to make everything easier. Let’s face it – making pancakes can be such a time consuming activity and a real struggle, at least it often is for me. The outcome of these was soooo goooood! And topped with blueberry nice cream, agave syrup and freeze dried strawberries you can’t go wrong ūüėČ You can reduce calories a little by changing the coconut milk with other kind of plantmilk.

Snickers nice cream bites

IMG_1323-minYummy yum yum, I pretty much always keep bananas in the freezer (peeled and chopped into small pieces) to be able to quickly whip up banana blueberry nice cream, chocolate nice cream,¬†this raw cake¬†or these awesome Snickers-nice-cream-bites right here ūüôā Of course frozen bananas are also great in smoothies and smoothie bowls!

These are an amazing combination of a salty, sweet nut bottom, fresh banana nice cream and a little chocolate on top.

Vegan birthday raw cake

IMG_1098 IMG_1100I made this for my mum’s birthday, and it was so delicious! The bottom layer is chocolate brownie, then there’s¬†a thick layer of banana nice cream and in the end just a thin layer of chocolate topping. Good part is, it’s a raw cake, it’s paleo, low carb, sugarfree and gluten free. If it’s a birthday cake just use some fruit to write whatever you wanna write on it for that person’s birthday ūüôā Remember that you have to prepare the bananas half a day prior to your cake making, and you could as well boil the sweet potatoes, so they’re ready and cooled off, when you’re finishing the cake. Make the cake a day before you’re serving it, it’s way better when it’s completely cold.


Brownie base

  • 300 g sweet potato (boiled and cooled off)
  • 6 tablespoons syrup
  • 3 tablespoons raw cocoa powder
  • 1 big ripe avocado
  • 60 g roasted and chopped hazelnuts
  • 2 tablespoons coconut flour

Banana nice cream

  • 6 of the ripest bananas you can find – peel, cut in small pieces, freeze for at least half a day
  • 180 ml creamy coconut milk
  • 1 teaspoon of salt
  • 2 vanilla sticks
  • 2 teaspoons stevia

Chocolate topping

  • 60 g dark vegan chocolate, chopped
  • 180 ml creamy coconut milk

Brownie base: Use a handblender to mix all the ingredients together except for the hazelnuts, those you just put in in the end and stir everything. Use cookie sheets to cover the bottom and sides (separately, so the sheets don’t make marks on the cake) of a spring form, and press the brownie base to cover the whole bottom evenly.¬†Let it sit in the freezer while you do the nice cream.

Banana nice cream: Put the coconut milk in a bowl with the salt, vanilla and stevia. Stir it good before you add the frozen bananas. Use a handblender to make an even ice creamy texture. Take out the spring form again and put the banana nice cream over the brownie base as a thick, flat second layer.

Put the cake in the freezer again (overnight), you don’t make the chocolate topping ’till right before serving.

Chocolate topping: Take a double boiler and heat the coconut milk and chocolate together. Keep stirring ’till the chocolate is completely melted and the sauce has an even texture. Take out the cake from the freezer, pour over the liquid chocolate topping, maybe decorate the cake with a few berries or other kinds of fruit – and serve.

Banan nice cream

  • 6 af de mest modne bananer, du kan finde¬†– skr√¶l, sk√¶r i sm√• stykker og giv¬†dem s√• mindst en halv dag i fryseren
  • 180 ml¬†cremet kokosm√¶lk
  • 1 teske¬†salt
  • 2 st√¶nger vanilje
  • 2¬†teskeer stevia


  • 60 g¬†m√łrk vegansk chokolade, hakket
  • 180 ml¬†cremet kokosm√¶lk

Browniebund: Brug en stavblender til at blande alle ingredienser undtagen hasseln√łdderne godt sammen. S√• putter du n√łdderne i, og r√łrer godt.¬†Brug en springfrom, hvor du har fastsat bagepapir b√•de p√• bunden og siderne hver for sig (s√• kagen ikke f√•r m√¶rker efter papiret p√• siderne). D√¶k bunden med browniedejen og flad det ud med en dejskraber.

Banan nice cream: Put kokosm√¶lken,¬†saltet, vaniljen og steviaen i en sk√•l og r√łr godt rundt.¬†Tilf√łj bananerne. Blend med en stavblender, s√• det f√•r en ensartet og is-agtig konsistens. Tag springformen ud af fryseren igen, og lav et tykt lag af “isen” over brownie, som du udlader en en dejskraber.

S√¶t kagen i fryseren igen (over natten), du laver f√łrst chokoladesaucen lige f√łr servering.

Chokoladesauce: Varm kokosm√¶lken og chokoladen i et vandbad, s√• det smelter sammen mens du r√łrer l√łbende.¬†Hold f√łrst op med at r√łre, n√•r saucen har en ensartet konsistent og chokoladen er helt smeltet. Tag kagen ud af fryseren, h√¶ld chokoladesaucen over, pynt evt. med lidt b√¶r eller andet frugt – og server.

Tiny paleo pancakes

IMG_3308These taste like classic pancakes but without you having to eat sugar and grains.

Tiny paleo pancakes

  • 1 banana (blended or mashed)
  • 30 g coconut flour
  • 2 teaspoons husk
  • 2 dl plant milk (I used coconut milk)
  • 1 teaspoon baking soda
  • 1 vanilla stick
  • 1 teaspoon cardamom
  • 2 teaspoon chia
  • 1 tablespoon coconut oil (melted)
  • 2 eggs
  • a handful of chopped nuts, berries and chopped dark chocolate for topping

Whip everything together in a bowl. Heat up a pan, put a bit of coconut oil on it and make little pancakes. Be careful when you turn them over – they need quite some time on the first side before they’re ready to be touched without breaking apart.

  • 1 teske¬†kardemomme

  • 1 spiseske¬†kokosolie (smeltet)
  • 2¬†√¶g
  • en h√•ndfuld hakkede n√łdder, hakket m√łrk chokolade og b√¶r til pynt

Pisk alting sammen i en sk√•l. Varm en pande op, og put lidt kokosolie p√• den. Lav sm√• pandekager.¬†V√¶r forsigtig, n√•r du vender dem – de har brug for en del tid p√• f√łrste side, f√łr de h√¶nger nok sammen til ikke at g√• fra hinanden, n√•r du r√łrer ved dem.

Vegan paleo cake with chocolate and banana


I made this yummy thing yesterday on my birthday.¬†With this cake you both give yourself a treat and stock up on antioxidants! It’s very heavy, so you’ll probably only need one piece. A few berries on top would definitely add a nice, fresh touch.

Vegan paleo cake

  • 4 ripe bananas
  • 10 dates
  • 2 tablespoons of chia seeds
  • 3 dL water
  • 100 grams almonds (blended) or almond flour
  • 3 dL coconut flour
  • 2 tablespoons of husk / fiber husk / psyllium husks
  • 2 teaspoons cinnamon
  • 1 vanilla stick or a teaspoon of vanilla powder
  • 1 dL raw cocoa powder
  • 1 teaspoon of baking soda
  • 80 grams of vegan chocolate
  • 2 tablespoons of coconut oil

Vegan frosting

  • 4 tablespoons of coconut oil
  • 1 dL syrup
  • 3 tablespoons of raw cocoa powder

Mix the chia seeds and water in a cup and let it soak. Open the dates with a knife and take out the stones. Put the bananas and dates in a bowl and use a handlender to mix it together. Chop the chocolate into chunky pieces and add it to the bowl. Mix all the other ingredients into the bowl, you might want to heat the coconut oil slightly first depending on its softness. Grease a loaf pan with coconut oil and put in the dough. Bake it at 160¬įC for 45-50 minutes.

Make the frosting while you wait for the cake to cool of. Just heat the coconut oil a little bit and mix it with the other ingredients. Smear a thick layer on top of the cake. Put the cake in the fridge a few hours before serving.

  • 80g¬†vegansk chokolade
  • 2¬†spiseskeer kokosolie

Vegansk glasur

  • 4 spiseskeer¬†kokosolie
  • 1 dL¬†sirup
  • 3¬†spiseskeer kakao

Bland chiafr√łene med vandet i en kop og lad det st√• for sig indtil du har blandet alt andet. √Öbn dadlerne med en kniv og fjern stenene.¬†Put bananerne og dadlerne i en sk√•l og brug en stavblender til at blande det sammen. Bland alle ingredienserne – ogs√• chiablandingen i sk√•len.¬†Kokosolien skal nok varmes en smule f√łrst for at den let kan blandes sammen med det andet.¬†Sm√łr en rugbr√łdsform med kokosolie og put dejen i.¬†Bages ved 160¬įC i¬†45-50 minutter.

Lav glasuren mens kagen k√łler af. Varm kokosolien en smule og bland den med de andre ingredienser.¬†Sm√łr et tykt lag p√• toppen af kagen.¬†S√¶t kagen i k√łleskabet nogle timer f√łr servering.
