Bean pasta with tomato sauce and baked root fruits

IMG_1171A simple, healthy, vegan dinner! Lots of protein from the soy bean pasta, and the texture and taste is perfectly pasta-like just way more healthy 😉 You can buy bean pasta/spaghetti in many supermarkets, health stores and of course online!

What you need (4 people)

Chop the root fruits and sprinkle some olive oil and spices over (I used salt, pepper, chili, curry, turmeric). Bake in oven for 30 to 45 minutes (check them and take them out when they’re soft). Boil the pasta. Serve with tomato sauce 🙂

En simpel, sund, vegansk aftensmad! Masser af protein fra sojabønnepastaen, og konsistensen og smagen er helt pasta-agtig bare meget mere sund 😉 Du kan købe bønnepasta/-spaghetti i mange supermarkeder (f.eks. Rema 1000 og Superbrugsen), helsekostbutikker og selvfølgelig online!

Hvad du skal bruge (4 personer)

Hak rodfrugterne put lidt olivenolie og krydderier udover dem (jeg brugte salt, peber, chili, karry, gurkemeje). Bag i ovnen i 30 til 45 minutter (tjek til dem løbende og tag dem ud, når de er bløde). Kog pastaen. Server med tomatsauce 🙂
