Coconut blueberry banana ovencakes

IMG_1402-min IMG_1403-min IMG_1410-min IMG_1411-minI call these “ovencakes” instead of pancakes because I cooked them in the oven to avoid using any oil and to make everything easier. Let’s face it – making pancakes can be such a time consuming activity and a real struggle, at least it often is for me. The outcome of these was soooo goooood! And topped with blueberry nice cream, agave syrup and freeze dried strawberries you can’t go wrong ๐Ÿ˜‰ You can reduce calories a little by changing the coconut milk with other kind of plantmilk.

Glutenfree, irresistible vegan lasagne

Soya Makhani

I never tried soya bites before, but they’re really nice! The whole dish turned out yummy, creamy and spicy ๐Ÿ™‚

IMG_1299 IMG_1300-1Mayo, mayo, mayo <3 Don’t worry, you don’t have to steal anyone’s eggs to make it… It’s actuallyย really simple! Just four ingredients and a handblender, and there you have it (and it looks really cool, when the oil-milk-vinegar-salt-mixture almost magically becomes mayonnaise).

Bean and lentil hot pot

So healthy ๐Ÿ™‚ I’m so thankful for being vegan right now – it’s an amazing journey, where I get to explore this hugeย new cuisine. Some people might think veganism is restrictive, I say I’ve never tried this many different wonderful foods before! Lentils and beans are veggies that I haven’t really used that much before, but I’m so glad I started getting to know them ๐Ÿ˜‰ Try this!
